Minced Zucchini Dish


Saute 500gr of minced beef on the pan.
While it's darkening, boil 3 pre-chopped zucchinis and 2 tomatoes.
When the minced beef is ready, add it to the cooker.
Add salt and pepper to taste.
Stir occasionally.

It has all the protein and vegetable you need in a dish.
You can have greek yoghurt on the side.

Another Bun-Less Burger


No need to write a recipe for this.
What you see is what you get.
Just ditch the bread and be creative with your burgers.
You can use bell peppers or you can use lettuce to wrap the meat.
Either way, it tastes great and so fresh and on the plus side 
you don't fill yourself with the useless bun 
and you can have two burgers without the guilt.

Damson Plum Compote


Ingredients :

2 pitted plums
a pinch of corn tassel
a pinch of cherry stem
peel of an apple
optional : clove, cinnamon

Pour a glass of water into a cooker and add the ingredients,
After it's boiled, filter and drink the water.
You can eat the plums too.

Great for a snack !

Bun-Less Burger

I love burgers, especially cheeseburgers. And i can't give up on my burgers just because i'm on a diet.


For the meatloaf :
500gr minced meat
2 tbsp oats / oatbran / stale bread
1 egg
Salt, pepper, thyme..

Mix everything and make patties.

I used cheddar cheese but you can also use cream cheese or your favorite kind of cheese.
Add cherry tomatoes for the eyes and mayonaise or cream cheese for the smile.

There you go..
You now have bun-less smiley burgers.

Flourless Banana Pancakes


Mix 2 eggs with one ripe banana, bananas could be a little chunky to give it some texture 
 Pour the mixture into the preheated pan with a drop of coconut oil.
Cook each side for 2 minutes.

Add fresh fruit or a little bit of honey/maple syrup but be careful, they're sweet already.

Oat Bran Bread & Bun



6 tbsp oatbran
4 tbsp milk powder
3 tbsp yoghurt
2 eggs
1/3 cup milk  
1 tsp backing powder


Mix the ingredients
Add olives / cheese .. optional
Pour it into a baking dish or scoop onto the baking sheet.
Bake for 20 minutes at high temperature or till the top is golden brown, then lower the temperature and bake for another 15 minutes or till the toothpick comes out clean.

Protein Packed Soup


This serves 1 so multiply if needed.

While a portion of chicken or turkey is cooking..
Mix;
3 tbsp greek yoghurt
1 egg yolk
1/2 tbsp oatbran 
till it's smooth and look like a creamy texture.
Add a cup or two of the broth when the chicken is cooked.
Add the sliced chicken.
Keep stirring until it's boiling.

Sprinkle some mint and red pepper.

Flour-less Peanut Butter Muffins

I love cooking and baking, but when it's only me I whip up a simple salad or soup and that's it. That's why I love having guests over, then i've got people to share it with. If not guests then my husband who is thankfully ready to try whatever I make. Attention! I said try, not eat !! He is the most pickiest person that I've ever met. (Worse than me) Before we got married, I told him that he should tell me if i'm doing something that he doesnt't like, it could be a meal or just a thing at home. It's hard to share the same house with anyone, husband or not. So I advised him to be honest about everything, that I wouldn't be offended, if not he would have to live with the things he hate forever. And after that, when we moved in together, I was so happy that he was always saying thank you and finishing whatever I prepared for him. It took him 6 months to tell me that I cut the salad too big for his taste. Everyone have different tastes so it's ok. I like mine bigger or actually I don't care about the size if it's just me eating. When he saw that I was ok with his comment, and how I changed the style I cut his salad, he started commenting on everything. I opened the doors of the pandora box.. Back to now, he tries it, tells me what i should add, or adjust something. And rarest of times he says " this time you nailed it love " and this recipe is one of them. Not too sweet, not too crumbly or soft, not too blend. The right amount of everything. You can have it as an afternoon snack with your coffee or have it as a quick breakfast on the go. The muffin cup sizes are the best portion sizes for this recipe. So you know when to stop. Don't think that you can eat all of them in a day because they're flour-less. Peanut butter is full of fat, it may be a healthy fat but still. Eat no more than 1 or 2 muffins a day.
Serving size for peanut butter is one tablespoon a day.


Ingredients :
1 cup peanut butter
2 mashed bananas
2 or 3 eggs
Baking powder
1/4 cup maple syrup or honey

Mix everything and put it in the oven for 15 minutes, until they are brown. And then let them cool. Should be moist inside so don't over cook it.
Makes 12 muffins.

Nothing says " Good Morning " like a warm bowl of oatmeal.
I added a slice of pineapple and some pomegranate.
*Oatmeal is a source of fiber.That means, when you eat oats for breakfast, you're going to feel full for a long time.
*Pineapples help digestion. Because of their fiber and water content, it helps to prevent constipation and promote regularity and a healthy digestive tract.
*Pomegranates are antioxidants.

Grab & Go Breakfast Muffins



If you are in a hurry in the mornings, 
or you prefer skipping breakfast for a few more minutes of sleep,
Then this one is for you.
Just decide the quantities according to your daily intake and mix your eggs with whatever is in the house. I used turkey slices, different types of cheese, bell peppers, sliced olives and spinach. You can always add oats or oat bran and a teaspoon of baking powder if you like the puffiness.
Mix everything in the food processor and then pour it into the muffin pan and bake for 15-20 minutes or until golden brown on the top.
Here you go. 
You can put them in the freezer and just microwave in the morning or even take them out at night and they will be defrosted until morning. Just grab and go.
