Flour-less Peanut Butter Muffins

I love cooking and baking, but when it's only me I whip up a simple salad or soup and that's it. That's why I love having guests over, then i've got people to share it with. If not guests then my husband who is thankfully ready to try whatever I make. Attention! I said try, not eat !! He is the most pickiest person that I've ever met. (Worse than me) Before we got married, I told him that he should tell me if i'm doing something that he doesnt't like, it could be a meal or just a thing at home. It's hard to share the same house with anyone, husband or not. So I advised him to be honest about everything, that I wouldn't be offended, if not he would have to live with the things he hate forever. And after that, when we moved in together, I was so happy that he was always saying thank you and finishing whatever I prepared for him. It took him 6 months to tell me that I cut the salad too big for his taste. Everyone have different tastes so it's ok. I like mine bigger or actually I don't care about the size if it's just me eating. When he saw that I was ok with his comment, and how I changed the style I cut his salad, he started commenting on everything. I opened the doors of the pandora box.. Back to now, he tries it, tells me what i should add, or adjust something. And rarest of times he says " this time you nailed it love " and this recipe is one of them. Not too sweet, not too crumbly or soft, not too blend. The right amount of everything. You can have it as an afternoon snack with your coffee or have it as a quick breakfast on the go. The muffin cup sizes are the best portion sizes for this recipe. So you know when to stop. Don't think that you can eat all of them in a day because they're flour-less. Peanut butter is full of fat, it may be a healthy fat but still. Eat no more than 1 or 2 muffins a day.
Serving size for peanut butter is one tablespoon a day.


Ingredients :
1 cup peanut butter
2 mashed bananas
2 or 3 eggs
Baking powder
1/4 cup maple syrup or honey

Mix everything and put it in the oven for 15 minutes, until they are brown. And then let them cool. Should be moist inside so don't over cook it.
Makes 12 muffins.
